But thats obv no reflection on Down Yonder. Definately recommend it.. The owners were lovely and made me very welcome, the rooms very smart and comfortable, free wifi, freshly cooked omellete for breakfast-what more could I ask for! This is a hidden gem for anyone visiting the Sligo area and great value for money. I stayed here last week-end and this is one not to miss if in Sligo!! The welcome we received was superb,the rooms are beautiful,clean and very quite,we had a great nights sleep!
Myself and two friends stayed and we got connecting rooms a double and single. The house is set in a wonderful location Rosses Point and we would of loved to of had all day to enjoy it! This is a 5 star at its best and would put some hotels to shame! We look forward to returning again!
The O'Haras were incredibly welcoming -- they invited me in to meet their family, poured me up some amazing coffee, and we chatted for hours around the kitchen table. I've stayed in several bed and breakfasts where the hosts often seemed wary about hosting a solo something traveller, but I felt so at home here. Safer and more comfortable than a hostel, more personable than a hotel.

The bed is to DIE for. The family even helped me arrange rides into Sligo Town when I wanted to see a band play one night. Love it here! The O'Hara family could not have been more welcoming and friendly and the guesthouse is set in a wonderful location overlooking the mountains. The rooms were extremely comfortable and feature the most refreshing showers that I have ever experienced! Breakfast was delicious and the free wi-fi was a nice bonus.

Will definitely be back! Staying here for 1 night only was my biggest regret. I'll be back next year for the Sligo races! We were well looked after the moment we walked in the door. The house is beautifully decorated and the bedrooms were lovely, but it was the showers that did it for me. I'd nearly go back for that alone! One of my all time favorite comfort foods is a tomato sandwich—toasted bread, a little Veganaise, a couple of tomato slices and a sprinkle of salt. I definitely inherited this simple sandwich habit from my mom.
I went up yonder to visit my mom recently and she asked me if I wanted a tomato sandwich, just as she had asked me a hundred times in my childhood.
I put together this tart to mimic the summer flavors of a good tomato sandwich, but with a little extra bit of fancy for a potluck side dish. This tart is made to be served cold, like a savory cheesecake. Silky smooth and savory, this tart is really a summer gem. I served the tart with mixed lettuce salad and, even though it was quite chilly in the house without the furnace on, the trip down memory lane and the great flavors were enough to warm me up and make me a happy, happy diner. Place bread crumbs in a bowl and pour the melted margarine over the crumbs. Toss well with a fork until the margarine is evenly distributed.
Firmly press the crumbs into the prepared pie plate. Bake the crust in the middle rack of the the oven for 10 minutes. Allow the crust to cool while you prepare the filling and move the oven temp up to the Sprinkle the slices evenly with salt. Set tomatoes aside. In a blender or food processor, add tofu, oil, nutritional yeast, garlic powder, salt, and mustard powder.
Blend until very smooth and creamy. Pour this mixture onto the cooled crust and spread out evenly using the back of a large spoon. Place the tomato slices in a single layer on top of the tofu mixture. Add the basil leaves on top of the tomatoes, then add the onion slices over that. Bake at for minutes, until the tart looks lightly browned and is just starting to pull away from the sides of the pan. Allow to cool on a cooling rack for 30 minutes, then chill tart for at least 4 hours before serving. Wow, that looks perfect! I bet I could make it with white beans in place of the tofu so thanks for sharing the recipe.
Also, I love when parents still ask you if you want the same foods as you used to eat.
